A keto chef who lost 80 pounds following the low-carb, high-fat diet is sharing how she makes everything from bread to doughnuts that are free of carbohydrates and sugar. 

Maria Emmerich, founder of Maria Mind Body Health, has penned more than a dozen keto-friendly cookbooks that have been read by the likes of Halle Berry, Valerie Bertinelli, and Al Roker. 

The wellness expert has a combined total of 316,300 followers on Instagram and TikTok, where she shares her low-carb recipes, proving that people can still enjoy versions of their favorite breads and desserts while following a ketogenic diet.

Emmerich, 42, struggled with her weight growing up, and she was diagnosed with polycystic ovarian syndrome (PCOS) when she was 16. 

The hormonal disorder causes enlarged ovaries with small cysts on the outer edges, and symptoms include irregular periods, weight gain, hair loss, oily skin, and acne. 

She started limiting her carbohydrates and following what is now known as the ketogenic diet, which helped her lose 80 pounds. 

Emmerich’s experience inspired her to pursue a degree in nutrition and exercise physiology before she launched her coaching business. She wrote her first book about following a keto lifestyle over two decades ago.

In the video, she dumped liquid egg whites and salt into a bowl. Using her stand mixer, she whipped the mixture until it ‘looks like marshmallows.’ She then mixed in dried egg whites
Emmerich divided the egg fluff into two greased bread pans and baked them at 350 degrees for about 45 minutes. After the loaves cooled, she cut them into slices
Emmerich used the slices to make herself a grilled cheese sandwich, saying the center of the loaves were just like Wonder Bread

Earlier this month, she shared the original recipe for her zero-carb protein bread that she came up with 17 years ago and still makes twice a week. 

The best part is that it only requires two ingredients.

In the video, she dumped a carton of liquid egg whites and salt into a bowl. Using her stand mixer, she whipped the mixture until it ‘looks like marshmallows.’ She then mixed in dried egg whites. 

Emmerich divided the egg fluff into two greased bread pans and baked them at 350 degrees for about 45 minutes. After the loaves cooled, she cut them into slices.

‘The center is like Wonder Bread,’ she insisted. 

Egg whites are a key ingredient in many of her recipes, especially when she is making foods that are traditionally packed with carbs. 

Emmerich recently shared her recipe for the ‘best doughnuts’ that are ‘sugar-free, zero-carb, and packed with protein.’ They are also only 72 calories apiece. 

She made the dough using six egg whites, a pinch of salt, four tablespoons of allulose — a low-calorie sugar that naturally occurs in plant foods — two tablespoons of gelatin, and a third of a cup of egg white protein.

Once again, she whipped the mixture before pouring it into a greased doughnut pan. She baked them at 325 degrees for 15 minutes. 

The cookbook author topped off the doughnuts with a chocolate glaze that she made using keto chocolate from The Good Chocolate that was mixed with unsweetened almond milk and melted.

Emmerich, who adopted two boys from Ethiopia with her husband, often has her sons taste test her treats in her videos, including this one.

After baking the dish at 350 degrees for 19 minutes, she had a tray of brownies that her son couldn’t wait to dig into.
