National Keto Day is celebrated on January 5 every year. On this day, we remember that people who follow keto diets severely restrict carb intake, making their bodies use fat for fuel. This leads to weight reduction and improves brain function. Keto remains a top trend in dieting for its effectiveness and health benefits.  

What Is the Keto Diet? 

The keto diet has become widely recognized as one of the most popular ways to lose weight rapidly. This diet plan achieves fast weight loss by transforming fat into energy. The keto diet also brings benefits like acne prone skin, improved heart health, reduced cancer risk and many more.  

Listed below are some simple keto diet recipes which help you stick to your keto-friendly diet plan:  

Keto chicken curry 

Ingredients: 

-50g chicken, bone-in, cut into 2-inch pieces 

-4 tbsp full-fat yogurt 

-2 tsp red chilli powder 

-Salt to taste 

-½ tsp turmeric powder 

-1 tbsp ginger-garlic paste 

-1 tbsp lemon juice 

Method: 

1. In a bowl, mix chicken, yogurt, red chili powder, salt, turmeric powder, ginger-garlic paste, and lemon juice and let it sit for 30 minutes. 

2. Chop the onion and tomato into small pieces. 

3. In a non-stick pan, melt butter. Add black peppercorns, bay leaf, green cardamoms, and cloves. Cook until it smells good. Then, add chopped onion and cook.  

4. Put in the chopped tomato and some salt. Mix well, cover, and cook until the tomato becomes soft. 

5. Add coriander powder, cumin powder, and the marinated chicken. Cook on high heat for 4-5 minutes. 

6. Toss in chopped coriander and 2½ cups of water. Mix well, cover, and cook until the chicken is ¾ cooked. 

7. Sprinkle garam masala powder and mix. Cover and cook until the chicken is fully cooked. 

Avocado and Bacon Egg Cups  

Ingredients: 

– 2 ripe avocados 

– 4 large eggs 

– 4 slices of bacon 

– Salt and pepper to taste 

– Chopped chives for garnish (optional) 

Method: 

1. Preheat your oven to 375°F (190°C). 

2. Cut the avocados in half and scoop out a small portion of the flesh to create a well for the egg. 

3. Place the avocado halves in a baking dish. 

4. Carefully crack an egg into each avocado half. 

5. Season with salt and pepper to taste. 

6. Wrap each avocado half with a slice of bacon. 

7. Bake in the preheated oven for 15-20 minutes or until the eggs are cooked to your liking. 

8. Garnish with chopped chives if desired and serve. 

Keto Almond Flour Pancakes 

Ingredients 

– 1 cup almond flour 

– 2 eggs 

– 1/2 cup almond milk 

– 1 teaspoon baking powder 

– 1 teaspoon vanilla extract 

Method: 

1. Mix almond flour and baking powder in a bowl until well combined. 

2. Combine eggs, almond milk, and vanilla extract with the dry mixture. Stir until a smooth batter form without lumps. 

3. Allow the batter to rest for a few minutes 

4. Heat a non-stick pan over medium heat 

5. Put the batter on the pan to make pancakes as big or small as you like. Cook until bubbles appear on the surface, then flip and cook the other side until golden brown. 

6. Once cooked, serve your almond flour pancakes with keto-friendly toppings like sugar-free syrup, berries, or a dollop of whipped cream.
